El Valle de Pubenza, en donde se encuentra ubicada la ciudad, fue cuna de grupos indígenas paeces, para luego ser colonizada y fundada el 13 de enero de 1537, sin contar con una definición específica de su territorio. Su fundador y primer Gobernador fue Sebastián Moyano de Belalcázar.
Durante la época colonial, Popayán fue la segunda ciudad en orden administrativo, después de Santa Fe, en la Nueva Granada. La ciudad ocupó un lugar importante en la historia colombiana, por ser conexión en la vía a Cartagena al Norte y hacia las fronteras de Quito y Lima, al sur. Al ser punto comercial y vial entre sitios de importancia del país, nace la necesidad de apoyar la conservación de las tradiciones, las joyas arquitectónicas y religiosas con las que cuenta.
Las familias adineradas del Valle del Cauca, que tenían grandes azucareras en el territorio, fueron quienes comenzaron a formar Popayán como una ciudad de progreso. El buen clima y la fertilidad de las tierras, fue el atractivo que permitió que estas familias se interesaran en la construcción de mansiones y edificios; además se convirtieron en el apoyo económico para la recuperación de conventos e iglesias, que le dieron identidad a la ciudad.
Popayán ha sufrido varios eventos telúricos, debido a su ubicación sobre fallas tectónicas que la hacen una zona de alto riesgo sísmico. Uno de los más fuertes se desarrolló en 1983, el cual causó la destrucción de varios monumentos arquitectónicos, que luego fueron recuperados y reconstruidos gracias al apoyo del gobierno y los mismos residentes. A pesar de todo, sus edificaciones no han sufrido mayor daño y se han mantenido con el pasar del tiempo.
Economía
Popayán cuenta con una economía basada en el sector agrícola, pecuario y ambiental; sus productos son la caña, el café, las hortalizas y frutales; el sector pecuario, se basa en la producción del pollo de engorde, gallinas ponedoras, porcicultura, piscicultura y ganadería.
Folklore
Popayán cuenta con una cultura étnica y religiosa muy arraigada, donde fiestas patronales, desfiles y procesiones giran en torno a la alegre vida del payanés. También se caracteriza por dar a conocer en estas fiestas, danzas como el bambuco, el currulao y la chirimía; música típica de la región.
Arquitectura
La arquitectura colonial de Popayán es el principal atractivo de la ciudad. Existen casonas, edificios, iglesias que han conservado su estilo original por más de 4 siglos; por esto, cuenta con uno de los centros históricos más conservados del país.
La arquitectura colonial española data de los siglos XVI y XVII, con un estilo muy uniforme, ventanales y portales de gran tamaño, además de patios centrales con fuentes o esculturas en piedra, que le dan el toque de exclusividad. Este estilo esta en gran parte influenciado por el estilo renacentista, que se ve reflejado en los templos, iglesias, capillas y monasterios, que fueron construidos gracias a las influencias de familias acaudaladas de la ciudad.
No solo la fachada y exteriores se destacan por su belleza; los interiores de las iglesias cuentan con vitrales, pinturas y monumentos tallados, construidos por importantes artistas de la época y de costosa elaboración. La mayoría de piezas religiosas son hechas completamente en oro, decoradas con piedras preciosas y esmeraldas; tesoros de incalculable valor, resguardados con total seguridad, ya que sólo se muestran al público en la Semana Santa.
Gastronomía
Popayán se caracteriza por tener el título de Ciudad Gastronómica de la Humanidad reconocido por la Unesco. Hasta ahora ha sido sede del Congreso Nacional Gastronómico de Popayán, del cual se han realizado 10 ediciones con países invitados de honor como Perú, Brasil, España, Chile, entre otros. Este reconocimiento se ha dado por la tradición gastronómica que ha dejado la cultura indígena y española, combinando ingredientes propios con frutos típicos de España.
La gastronomía payanes cuenta con platos típicos como:
Sancocho: cocido realizado con papa, yuca y mazorca de maíz, aderezado con carnes de gallina o costillas de res.
